In accordance with “the caveman diet”, these yummy tigernut pancakes can be decorated with honey, fresh berries and nut butter to be a perfect option for a wonderful healthy breakfast! But first let’s talk about tigernuts. 

What are tigernuts?

Extremely nutritious, tigernuts are tubers which grow in the ground. They contain a whole lot of vitamins and minerals. According to some studies, tigernuts have been the main staple for early humans who lived on the earth, and now we are going to share with you the recipe for tigernut paleo collagen pancakes and hope you will enjoy it just like what our ancestors did in paleo age.

Tigernut paleo collagen pancakes Recipe

Ingredients

The Pancakes Part:

  • ¼ cup of tigernut flour
  • alternative sweeteners like Stevia or Swerve (one tablespoon of Swerve or 7 drops of English toffee stevia) 
  • 1/4 tablespoon of baking powder
  • 1/4 tablespoon of salt
  • 2 eggs, whole and beaten 
  • Half a tablespoon of apple cider vinegar
  • Half a tablespoon of vanilla extract (pure)
  • 2 tablespoon of unflavored collagen peptide powders

And now, for our toppings options:

  • 1 tablespoon of maple syrup
  • 1 tablespoon of coconut nectar
  • Alternative sweeteners like 1 tablespoon of powdered Swerve
  • 2 tablespoon of raspberries or blueberries
  • 1 – 2 tablespoon of almond butter
  • 1 – 2 tablespoon of peanut butter

Step by Step Instructions

  1. In a medium-sized bowl, mix all the dry ingredients of the recipe
  2. In another medium sized bowl, mix and stir all the non-dry ingredients of the recipe.
  3. Add the dry ingredients into the beaten eggs. Mix and whisk until it is completely lump-free.
  4. Drop a small amount of butter (or coconut oil for example) in pan (on very low heat)
  5. Add 3 to 5 tablespoons of batter into the pan. 
  6. Ater one or two minutes, the bubbles will begin to show up. Flip your pancakes to the other side. And wait for the bubbles to show up after another one or two minutes. 
  7. Let it stay on the pan for about 30 more seconds. Repeat the process until you’re done with your batter. Add butter or coconut oil whenever necessary. 
  8. Maple syrup on top. Add the other topping options for extra levels of protein and fat. Coconut nectar, alternative sweeteners, berries, or even almond butter are all amazing options.
