Well, to be honest, the tiger nut name is somewhat misleading as it is not a Nut! It’s actually a tuber, that grows underground – like sweet potatoes, though much smaller in size. Furthermore, when collagen is infused into this yummy cookie, the health benefits are ramped up, since tiger nut collagen cookies contain many vitamins, proteins, and useful minerals. So, let’s jump in and see the ingredients listed below:

Tiger Nut Collagen Cookies Recipe



  1. 1 cup of tiger nut flour
  2. 1/3 of a cup of collagen peptide protein powder
  3. ¼ of a tablespoon of baking soda
  4. ¼ of a cup of cold butter
  5. ½ a tablespoon of sea salt
  6. 2 tablespoons of vanilla extract
  7. ⅓ of a cup of alternative sweetener
  8. 1 egg

Chocolate Dip

  • ⅛ of a cup  of alternative sweetener or 5-10 drops of your choice of stevia
  • ¼ of a tablespoon of sea salt
  • ¼ cup of chopped walnuts
  • ⅛-¼ of a cup of dark chocolate chips or chunks

  1. Preheat oven to 350°F (180°C). Use parchment paper to line a baking sheet.
  2. Combine tiger nut Flour, Collagen, sweetener, butter, vanilla extract, egg, baking soda, and sea salt in a medium bowl, either by hand or via an electric mixer
  3. Then Scoop 12 cookie dough balls and set them on the ready baking sheet.
  4. Bake chocolate cookies for 12-15 minutes until the edges turn brown.
  5. While the cookies are baking, place your choice of sweetener along with the chocolate chunks, coconut oil, and sea salt, in a small bowl, microwave it for 20 seconds, then remove and stir heartily to combine the chocolate and coconut oil. After that, microwave it for 10 seconds at a time, stirring instantly till the chocolate is melted and ready to serve as a dip.
  6. Remove the parchment paper from the pan to accelerate the cooling process.
  7. Stir the chocolate. Carefully spoon the chocolate over the front and the back of the cookie. Place it back on parchment paper, sprinkle your walnuts over the top and finally place them in the refrigerator for 20 minutes to cool down and take their final shape.
