Now, this yummy dish is immensely popular in India, and It is named this way due to the clay oven in which it is cooked: tandoor! This tantalizing tandoori chicken is linked to a Hindu who fled from Pakistan and opened his restaurant in Delhi. This tantalizing tandoori chicken is usually served on the bones which is now vastly popular in Asia, and also becoming more and more popular around the world.

 

As usual, you need to mix yogurt, spices and lemon juice in order to soak skinless chicken thighs into it. Sometimes you may want to slash the legs in a way that our liquid mixture can reach inside the meat for faster and better cooking. It is highly suggested not to make this dish with chicken breasts since they lack moisture, and they will get dried faster than chicken thighs and legs would, so you better use them instead.

 

This tantalizing tandoori collagen chicken is a fantastic choice for a meal, since it is both delicious and healthy. Well by healthy we are in fact referring to the collagen powder we want to use in this recipe, its magic ingredient. In short, collagen is a super vital protein in our body which is responsible for strengthening our bones and organs as well as rejuvenating our skin. So, let’s begin folks:

Ingredients

  • 1 kilogram of boneless chicken thighs
  • 4 heaping scoops of  unflavored collagen peptide powder
  • 1 – 2 cups of coconut milk (lite, low-fat)
  • 1 cup of Greek yogurt (low-fat, 2%)
  • 5 cloves of minced garlic
  • 1 or 2 tbsp of peeled and minced ginger
  • 2 tbsp of paprika (smoked)
  • 2 tbsp of cumin
  • 2 tbsp of salt to taste
  • 3 tbsp of pepper
  • 1 tbsp of cayenne
  • 6 cups of cooked rice (we recommend cauliflower rice, but you do you)

Step by Step Instructions:

  1. Mix everything except for the chicken thighs and cooked rice in a pressure cooker. Stir everything until all is fully incorporated. 
  2. Add boneless thighs to the pot. Place them on the top of the already incorporated mixture. 
  3. Close the lid and the vent. Now cook for about 20 minutes at high pressure. Then release the vent. 
  4. Move the chickens to a plate.
  5. Shred the chickens using knives or forks, Transfer them  back to the pot and stir. 
  6. Serve while it’s already hot with your cooked rice. 
  7. Cheers. Your tandori chicken is ready. Enjoy!
