Pumpkin Spice Collagen Donuts Recipe


   2 tablespoons of Pumpkin Puree

  • 6 scoops of collagen peptide protein powder
  • 2 tablespoons of melted and slightly cooled grass-fed butter
  • Non-stick Coconut Oil Spray
  • 2 tablespoons of Baking Soda
  • 1 tablespoon of vanilla

·        2 free-roaming eggs

  • 1 dash of pink Himalayan salt

·        1 tablespoon of Pumpkin Spice

  • ¼ of a cup of alternative sugar
  • ¾ of a cup of Super Fine Blanched Almond Flour
  • 1.5 tablespoons of Baking Powder

·        1 tablespoon of Xanthan Gum

  • ¼ of a cup of unsweetened almond or cashew milk
  • ½ a tablespoons of Cinnamon


·   1 tablespoon of pumpkin pie spice

·       2 tablespoons of melted Grass-fed Butter·   1-2 tablespoons of Powdered or Granulated Swerve (alternative sweetener)

Step by Step Instructions:

  1. First Preheat the oven to 350°F (180°C) and spray your silicone pan with coconut oil.
  2. Mix pumpkin puree, eggs, butter, vanilla, and almond milk for about 30 seconds with an electric mixer on low and set it aside.
  3. Add the collagen protein powder, xanthan gum, pumpkin pie spice, almond flour, baking powder, salt baking soda, and cinnamon in a separate medium bowl and mix.
  4. Gently fold in the dry ingredients to the wet ingredients until it is combined. Take care not to whisk too much as they will deflate.
  5. Distribute the batter evenly amongst the 12 cavities with a piping bag or a spoon.
  6. Bake it for a little more than 20 minutes until it turns golden brown.

7. Take it out of the oven and set it aside for at least 5 minutes for it to settle and cool. Finally, lightly pop donuts out from the bottom and then flip them for a better appearance.
