Fish Tacos With Cauliflower Tortillas + Collagen Recipe is an epic dish that is made with nutritious cauliflower tortillas. This delicious meal is made rather quickly, and it is also extremely healthy. This fish tacos recipe is like a royal feast where you get fresh fish pieces layered over tortillas along with the best toppings and a creamy fish tacos sauce. And since collagen has a flavor-like taste meaning it’s basically tasteless, we will add collagen to enrich our dish. This recipe is super easy to make and the end result will be impressive! So, let’s begin.

Ingredients

Collagen Cauliflower Tortillas (yields 16 small tortillas)

• Half a cup of collagen peptides

 • Half a cup of Parmesan and Mozzarella cheese 

• 4 cups of cauliflower rice

• 1 tablespoon of garlic powder, onion powder, cayenne and salt

• 2 eggs

Fish for Tacos

• Less than 1kg of flounder or other whitefish 

• 1 tablespoon of cayenne, cumin, salt and pepper

• 2 tablespoon of butter

Fish Taco Toppings:

• 2 cups of cabbage (shredded)

• 2 avocados (medium-sized and flesh cubed)

• ¼ cup of Coriander (chopped)

• 1 onion (diced, preferably red onion)

• Half a cup of cotija cheese

Yogurt Drizzle: 

• 2 tablespoon of Lime Juice

• 1 cup of Greek yogurt

• 1 tablespoon of garlic powder

Instructions

Yogurt Drizzle: 

  • 2 tablespoon of Lime Juice
  • 1 cup of Greek yogurt
  • 1 tablespoon of garlic powder
  • 1 tablespoon of hot sriracha sauce (up to 3 tbsp optional)
  • 1 tablespoon of salt 

Instructions

Collagen Cauliflower Tortillas:

  1. Preheat the oven (up to 375 degrees) and place a baking sheet pan with bakery paper (also known as parchment paper) 
  2. Put the cauliflower in a bowl (or bag) and microwave for 3 to 6 min (until it becomes tender) and let it cool.
  3. Now, take the cooked cauliflower and place into a food processor, and drive until it becomes like flour.
  4. Add your cheese, eggs, and spices into the food processor, and drive until you get a dough- like state..
  5. Scoop the mix out ⅛ cup at time, and place it on a baking sheet. Now, carefully take out circles the size of small tortillas. Make them as thin as possible, because that will turn them crispy. However, you need to be careful not to make any holes because that means your toppings will fall out. 
  6. If you plan to freeze them for later, then bake it for 12 minutes. Afterwards, let them cool for a couple of minutes, and store them between two sheets of bakery paper (parchment paper) in a freezer safe bag. Now, if you want to reheat, then preheat the oven at 375 and cook for about 4-5 minutes. Add toppings and cook for another 4-5, until the ingredients are completely  melted. 
  7. If you are using them immediately, simply flip them, and bake for another 4-5 minutes. 
  8. Pull out all of them and let them cool before using them for serving. Cheers! 

 

Fish

  1. You need to thaw the fish in a bowl of warm water for a couple of minutes if you plan to cook them from frozen. 
  2. Just like before, preheat the oven to 375 degrees.
  3. Place a rather large baking sheet with bakery paper (parchment paper) In a small dish. After mixing cumin, cayenne, black pepper and salt, you need to sprinkle the mix over both sides of the fish.
  4. Add butter to the top of the fish. (equally to all of the parts of the fish)
  5. Bake for about 20 to 25 minutes
  6. Pull them out, and let them cool slightly. Now, cut into small pieces. Make them ready for serving. Cheers. 

Yogurt Drizzle

  1. In a medium-sized bowl, combine Greek Yogurt, lime juice, garlic powder,  Sriracha sauce, salt, pepper until your desired hotness and saltiness is reached.
  2. Use a ziploc bag to drizzle your yogurt or simply spoon them into an empty squeeze bottle with a tip. 

 

Tips for better bites: Add 16 lime wedges for serving as a fish taco toppings.
