·         4-8 links chorizo or your choice of spicy sausages (chopped)

·         5-6 cups of cauliflower rice

·         4-6 cups of chicken broth (either store-bought or homemade)

·         6 scoops of collagen peptide protein powder

·         8 kale leaves (cut into thin ribbons and remove stems)

·         1 diced red onion

·         1 Fresh lime (juiced)

·         1/2 – 1 cup of Parmesan or Pecorino cheese

·         2- 3 tablespoons of curry seasoning or curry powder

·         1 tablespoon of garlic powder

·         1 tablespoon of olive oil

·         1 tablespoon of sea salt

·         1 tablespoon of chili powder

·         Garlic and extra salt to your taste·         Optional: 1 cup of unsweetened Coconut or Almond milk

  4. Add cauliflower rice, cheese, kale, salt, and broth
  5. If your veggies are not adequately covered, you can add water or some extra broth.
  6. Bring the soup to a boil over high heat and then reduce heat to medium and let it simmer until the kale and cauliflower are thoroughly cooked. This should take roughly 5 minutes.
  7. If you want to add milk, add it now.
  8. Taste for seasonings and salt to your taste.
  9. Now it’s time to serve the soup with a sprinkling of Parmesan cheese on top and a slice of sourdough or sprouted bread to soak up the lasting tasty broth at the bottom of the bowl.
