Have you heard the word “Macaroon”? Well in fact, the name ‘Macaroon’ stems from the Italian word maccarone meaning ‘paste’. At the beginning, they were made of almond paste and egg-whites, and that was the cause for macaroon’s consistency. Nowadays, these yummy cookies are crispy from the outside but soft inside. Macaroons are drop cookies consisting of coconut, ground almonds, egg, sugar, and flavorings. There are a various number of ways to bake these wonderful and mouth-watering cookies. Usually, the egg whites must be formed into stiff peaks. After folding into other stuff, they are placed on a baking sheet to be baked golden and that’s it!

 

Think of coconut macaroons as mini cupcakes stuffed with coconut.  The coconut macaroon is popular not just as a dessert but as a snack as well. You must be careful not to get addicted! (We’re joking. Don’t be careful!) People in different countries serve them in different ways, and as an example, people in the US preferably dip it in white chocolate to give it a better flavor. Today we are going to share a recipe with you which has a secret ingredient: Collagen! We want to make some coconut macaroons which are blessed with collagen powder as a way to enrich these cookies in terms of healthy stuff like various essential and nonessential amino acids. As you might know, collagen is the most prevalent protein in our bodies which is necessary for developing bones and skin structures.

 

For those who like to know more, collagen is useful for muscles, joints and brings elasticity to your skin. Collagen comprises 1/3 of all proteins in your body. As you grow older, however, your body can hardly produce more of it, and that’s why adding collagen to your food can be a great supplement to remain healthy. Collagen can be also produced in your body by eating foods like egg whites, dairy, beef, lamb, lentils, beans, milk, cheese cabbage and mushrooms. Collagen Coconut Macaroons

Ingredients

  • Half a cup of unflavored collagen peptide powders. 
  • 3 cups of coconut flakes (shredded) 
  • 2 tablespoon of butter (melted)
  • Two eggs
  • Some alternative sweetener (like ⅓ cup of Swerve or a few drops of Stevia)
  • 2 tablespoon of pure vanilla extract
  • Some salt to taste (one tablespoon is enough)
  • Optional: chocolate chips

Recipe Steps:

  1. Set the oven to 350, preheat.
  2. Process the coconut flakes in a food processor, until they are granular.
  3. Now, add your collagen peptide powder to the processor and mix until well-incorporated
  4. Mix eggs, melted butter, alternative sweetener (stevia or swerve) and salt. Combine until it becomes a sticky dough
  5. Scoop up in shape of a golf ball  and place them on a bakery paper (parchment)
  6. Add just a tad of salt for taste. 
  7. Bake for about 15 minutes until they are golden brown on the top as well as around the edges of the cookies
  8. Let cool for about 7 to 8 minutes and sprinkle coconut flakes over on the macaroons
  9. They are ready to serve. Cheers!
