Collagen cauliflower flatbread with buffalo chicken is similar to, and a substitute for, pizza, but much easier to digest! Could you even imagine turning cauliflower into flatbread? Well, this yummy, tasty flatbread is extraordinarily good, mainly due to the ingredients involved like cheese and buffalo sauce. As you may know, cauliflower is rich in potassium, fiber, manganese, and vitamins. In a nutshell, this recipe can be an ideal option for those who are looking to add vegetables to their lunch or dinner.

Hearty Collagen Flatbread with Buffalo Chicken Recipe


·         4 cups of cauliflower rice

·         Collagen Flatbread

·         ½ a cup of collagen peptide protein powder

·         ½ a cup of mozzarella cheese

·         1 tablespoon of onion powder, salt, garlic powder, and cayenne

·         2 Eggs

·         1/3  a Cup of Parmesan Cheese

·         A Parchment paper or a non-stick baking mat

·         A 9×13 baking sheet

Buffalo Chicken Toppings

·         ¼ of a cup of Pure Hot or Buffalo sauce

·         1 pound of Cage-Free Chicken (chopped into half-inch cubes)

·         1-2 diced Roma Tomatoes

·         1 pitted and thinly sliced avocado

·         1 tablespoon of Grass-fed Butter

·         1-2 tablespoons of finely cut fresh spinach or basil

·         ½ a cup of diced red onion·         ½ a cup of shredded Mozzarella Cheese

Collagen Cookie Dough step by step


  1. Buffalo Chicken
    1. Add one tablespoon of grass-fed butter to a medium heat pan.
    2. Add your chopped chicken to the pan (The slower you cook the chicken the juicier and more tender it will be. It is recommended to let it cook and move on to the cauliflower crust)
    3. Every few minutes fling the chicken around the pan to be sure that all sides are thoroughly cooked. This should take about 6 to 8 minutes)
    4. Add 1 tablespoon of butter and buffalo sauce to the pan.
    5. Turn the chicken around the pan until it’s evenly coated with the sauce.
    6. Remove the chicken from the heat to avoid it becoming overly dry and then set it aside for flatbreads.


    Collagen Cauliflower Flatbread

    1.       Preheat the oven to 375°F (190°C) and t line it with a 9×13 baking sheet with either parchment paper or a non-stick baking mat.
    2.       Microwave cauliflower either in a bag or bowl for 3-6 min until it is tender and then let it cool for a bit.
    3.       Place your cooked cauliflower into a food processor until it turns fine like flour.
    4.       Add eggs, spices, and cheese, until it gains a dough-like consistency.
    5.       Scoop out all of the dough onto the parchment-lined baking sheet.
    6.       Start from the middle and carefully pat out the mix all across the pan. The thinner it is the crispier they will be later on.
    7.       If you want to freeze them for later, bake for 12 minutes. Remove and then cut into 6-8 parts (depending on the size of flatbread). Next, let them cool and pile them between sheets of parchment paper in a freezer-safe bag. Once you want to reheat your flatbread just set the oven again at 375°F (190°C) and cook it for 4 minutes, flip to the other side, add toppings and cook for another 4-5, until the ingredients are melted.
    8.       If you want to use them immediately, just cut them into smaller pieces as instructed above, flip them to the other side and then add your chicken, tomatoes, onions, and cheese and finally bake it for another 4-5 minutes.

    9.       Bring them out and let them cool, add Avocado, Parmesan, spinach &/ basil, and enjoy!
