Collagen Brussels Sprouts Recipe

Ingredients

Salad

·         2-3 tablespoons of roasted sunflower seeds

·         ½ a cup of crumbled feta cheese

·         1 diced apple

·         4-5 cups of arugula

Brussels Sprouts

·         ½ a teaspoon of Salt and pepper

·         1-2 tablespoons of Extra Virgin Olive Oil

·         4 cups of Brussels sprouts (ends trimmed and sliced into quarters)

Dressing

·         1-2 scoops of collagen peptide protein powder

·         2 tablespoons of diced red onion

·         3 tablespoons of apple cider vinegar

·         ¼ of a cup of Extra Virgin Olive Oil

·         1 juiced lemon·         4 tablespoons of Dijon mustard

Collagen Cookie Dough step by step

Step by Step Instructions:

  1. Brussels Sprouts
    1. As a first step, you should preheat your oven to 450°F or 230°C.
    2. Chuck already cut Brussels sprouts, along with salt, pepper, and olive oil in a Ziploc bag or a mixing bowl.
    3. Place marinated Brussels sprouts into a large rimmed baking sheet lined with Parchment Paper (lining your oven with parchment paper is optional as doing so ensures items don’t stick and additionally, makes cleaning up the oven an easy job).
    4. Cook Brussels sprouts at 450°F (230°C), until they are golden and just tender when cut with the tip of a knife. This should take about 20 minutes, but make sure to stir once after 10 minutes have gone by.

    Dressing

    1. In the meantime, take a large bowl and mix collagen powder with your onion, vinegar, and mustard. (Tip: if you want to dilute your collagen powder in water first you should add some warm water to it and then first stir and let sit for 30 seconds and repeat the process until the collagen is fully incorporated.
    2. Add remaining 1/4 of a cup of oil in a slow, balanced stream, whipping all the time, until completely blended.

    Salad

    1. Mix your Brussels sprouts and dressing.
    2. Finally, Transfer to a platter and then sprinkle with a few additional sunflower seeds.
